Gourmet Blocks & Cutting Boards (FAQ)

One design feature of many Boos Blocks® boards, particularly NSF certified professional boards, is that they are REVERSIBLE. REVERSIBLE boards expand the utility; two work surfaces on which to chop, slice, dice and mince. . Both sides are to be used equally to prepare different food types. If the board slides during use, place a dry (not wet) non-slip mat under the board.

When not in use, ensure the board does not sit in any moisture. It is important after hand washing to allow the board to air-dry while resting it on its edge or by placing it in a rack.

General Cleaning…. Hand wash your board after each use. Use a damp cloth and mild liquid detergent and dry it thoroughly with cloth or a paper towel. If a stronger solution is required then use one-part vinegar to five-parts water.

DO NOT soak or submerge the board in water and DO NOT put it in the dishwasher.

For Stains and odors…
Remove stains and odors by sprinkling kosher or table salt on to the board and rubbing it with a lemon. Let sit for 2 to 3 minutes, then wipe clean with a damp cloth. Use a clean paper towel to remove excess water or let the blocks air dry by standing on end.For stubborn stains, sand the area with a fine grit sand paper. Sand with the grain of the wood, never against the grain. Apply coat of oil after sanding.

Provide a generous oiling right out of the package and before first use.

Be sure to always coat all sides of the board when oiling.

Use a clean cloth to apply the oil in the direction of the wood grain and allow the oil to soak in. Let it soak overnight & provide extra coatings if needed.
It is important to apply oil generously on your Boos Blocks at least every 3-4 weeks or when the board appears dry & lighter in color. We recommend keeping the blocks oiled with Boos Blocks Mystery Oil or Board Cream. DO NOT JUST USE ANY TYPE OF COOKING OIL ON YOUR WOOD CUTTING BOARDS. THIS WILL DAMAGE YOUR BOARDS. With a minimum amount of care and maintenance, you can lengthen the life of your Boos Blocks® by many years.

Store your board on a rack or stand on end in a DRY area away from water or extreme heat or cold temperature sources. Storing it on end permits airflow on both sides.

Although Boos Blocks® cutting boards DO NOT harbor bacteria, it is a good habit to use one board for meats and a separate board for vegetables OR if you have a reversible board apply one side for meats and the other for vegetables.

For example, use one work surface for raw meat, poultry, or fish, and another work surface for cooked or ready-to-eat foods such as salad, vegetables, and breads.
