The "AA" Butcher Block is a testament to the quality of John Boos & Co. over the last century. Boos has been making the "AA" block since the late 19th century to the exact same specifications and with the same unsurpassed craftsmanship. It is this block that has made Boos famous among butchers and professional chefs around the world. Even if you're not a professional, you can chop, slice, sliver and dice like one. The "AA" block is a 41 cm thick block of hard maple with four sturdy, square, slightly tapered legs. Each block is made to order in Effingham, IL, USA and carefully constructed to Boos' famous facewood design from select premium kiln-dried hard maple pieces. Boos' face wood construction is extremely solid and robust, making the blocks less prone to nicks and gouges. It absorbs pressure from knife blades, helping to protect them and keep them sharper longer. The "AA" block is available in a variety of sizes, ranging from 61 x 46 cm to 102 x 89 cm. An optional wooden knife holder is also available. This attaches to the side of the block and is great for storing carving knives and cleavers. Your "AA" block will last a lifetime, if not generations, provided you care for it properly.
