The "AA" Butcher Block is a testament to the quality of John Boos & Co. over the last century. Boos has been making the "AA" block to the exact same specifications and with the same unsurpassed craftsmanship since the late 19th century. It is this block that has made Boos famous among butchers and professional chefs around the world. Even if you are not a professional, you can chop, slice, slice and dice like one. The "AA" block is a 41 cm thick block of hard maple with four sturdy, square, slightly tapered legs. Each block is made to order in Effingham, IL, USA and carefully constructed to Boos' famous end grain design from select pieces of premium kiln-dried hard maple. Boos' End Grain Construction is extremely solid and robust, making the blocks less susceptible to nicks and gouges. It absorbs pressure from knife blades, helping to protect them and keep them sharp for longer. The "AA" block is available in various sizes, ranging from 61 x 46 cm to 102 x 89 cm. An optional wooden knife holder is also available. This is attached to the side of the block and is ideal for storing carving knives and cleavers. Your "AA" block will last a lifetime, if not generations, provided you look after it properly.
